Fruited Bread Pudding with Eggnog Sauce

Heart Healthy Bread Pudding with Fruits and Eggnog Sauce - A delicious dessert ready in just an hour, sprinkled with nutmeg for extra flavor.
Ingredients:
  • 4 cups 1-inch cubes French bread
  • 1/2 cup diced dried fruit and raisin mixture
  • 2 cups fat-free (skim) milk
  • 1/2 cup fat-free cholesterol-free egg product or 2 eggs
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla
  • Ground nutmeg, if desired
  • 1/3 cup fat-free (skim) milk
  • 1 container (3 to 4 ounces) refrigerated vanilla fat-free pudding
  • 1/2 teaspoon rum extract
Instructions:
  • Preheat the oven to 350°. Grease a 9x1 1/4 inch pie plate with cooking spray. Add bread cubes to the pie plate and top with fruit mixture.
  • Whisk milk, egg product, sugar, and vanilla until smooth. Pour over bread and press cubes into mixture. Sprinkle with nutmeg before baking.
  • Bake without covering for 40 to 45 minutes until beautifully golden and fully set.
  • Mix all sauce ingredients in a small bowl until smooth.
  • Serve the bread pudding in wedges or spoon into dishes. Drizzle each serving with a scant tablespoon of sauce and sprinkle with extra nutmeg if desired. Keep the pudding and sauce covered in the refrigerator.
