Fruity bread puddings

Fruity twist on classic bread pudding with raisin bread and orange.
Ingredients:
  • Melted butter, for greasing
  • 85g (1/2 cup) raisins
  • 40.00 gm boiling water
  • 12 slices raisin bread, crusts removed
  • 36.00 gm sugar
  • 3 eggs
  • 500mls (2 cups) milk
  • 2.20 gm vanilla essence
  • 2 oranges
Instructions:
  • Preheat the oven to 180°C. Lightly grease 6 x 375mls (1 1/2-cup) ovenproof dishes with melted butter. Soak raisins in boiling water for 10 minutes, then drain. Arrange half of the bread triangles in the dishes. Add raisins and sprinkle 1 tablespoon of sugar over the top.
  • In a jug, whisk together eggs, milk, and vanilla until smooth. Pour the mixture into individual dishes. Top with the remaining bread slices and sprinkle over the remaining sugar. Allow the mixture to stand for 20 minutes. Bake in a preheated oven for 35 minutes, or until the custard is just set and the tops are golden brown.
  • Peel the rind from 1 orange using a vegetable peeler, making sure to remove the white pith. Cut the rind into strips or use a zester for a different texture. Segment the orange and toss the rind and segments together before serving with the puddings.
