Delicious chicken fruit salad, perfect on croissant or honey pita. Best enjoyed the next day for enhanced flavors. Optional: use nonfat mayo.
Ingredients:
  • 4 skinless, boneless chicken breast halves - cooked and diced
  • 1 stalk celery, diced
  • 4 green onions, chopped
  • 1 Golden Delicious apple - peeled, cored and diced
  • 0.33333334326744 cup golden raisins
  • 0.33333334326744 cup seedless green grapes, halved
  • 0.5 cup chopped toasted pecans
  • 0.125 teaspoon ground black pepper
  • 0.5 teaspoon curry powder
  • 0.75 cup light mayonnaise
Instructions:
  • Combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder, and mayonnaise in a large bowl and toss until fully mixed. Serve and enjoy!
