Indulge in a deliciously unique dish by adding pork sausages to a flavorful fruity curry!
Ingredients:
  • 18.20 gm peanut oil
  • 500g thick pork sausages
  • 1 large brown onion, thinly sliced
  • 2 carrots, peeled, halved lengthways, thinly sliced
  • 10.00 gm curry powder
  • 20.00 ml plain flour
  • 62.50 gm fruit chutney
  • 510.00 gm salt-reduced chicken stock
  • 1 granny smith apple, peeled, roughly chopped
  • 125.00 ml frozen peas
  • 10.60 gm lemon juice
  • Steamed white long grain rice, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • In a large, deep, heavy-based frying pan over medium-high heat, heat half of the oil. Cook sausages, turning occasionally, for 5 to 6 minutes until evenly browned. Transfer sausages to a large plate.
  • Heat the rest of the oil in a pan. Cook onion and carrot until onion is soft and just starting to caramelize. Stir in curry powder and flour for 30 seconds until fragrant. Pour in chutney and stock, bring to a boil. Add sausages back to the pan, then simmer partially covered for 15 minutes. Finally, add apple and cook for 5 minutes until sausages are cooked through.
  • Stir in peas and fresh lemon juice and cook for 1 to 2 minutes until warmed. Season to taste and serve over fluffy steamed rice, garnished with fresh coriander leaves.
