Pork tenderloin stuffed with bread crumbs, baked with fruity/spicy glaze.
Ingredients:
  • 1 (1 pound) pork tenderloin
  • 1 tablespoon canola oil
  • 3 celery ribs, chopped
  • 1 small onion, chopped
  • 0.5 cup bread crumbs
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped parsley
  • 0.25 teaspoon dried rosemary
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 0.25 cup cranberry jam
  • 0.25 cup jalapeno pepper jam
  • 1 teaspoon minced onion
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Make a lengthwise slit in the pork tenderloin, spread it open, and pound it flat to a 1/4-inch thickness using a meat mallet.
  • In a large skillet over medium heat, sear the flattened tenderloin in canola oil until browned on both sides, approximately 5 minutes per side. Transfer the tenderloin to a plate.
  • In a skillet, melt butter over medium heat. Saute celery and onion until tender for about 8 minutes. Mix in bread crumbs, parsley, 1 teaspoon of garlic powder, rosemary, salt, and black pepper.
  • Spread the flavorful bread crumb mixture generously over the tenderloin, leaving a small border. Enclose the stuffing by folding the tenderloin and secure it neatly with kitchen string before placing it in the roasting pan.
  • Combine cranberry jam, jalapeno pepper jam, minced garlic, and garlic powder in a bowl, then generously spread the mixture over the tenderloin.
  • Place in the oven and let the jam glaze develop until the stuffing reaches 160°F (70°C), which should take about 50 to 60 minutes. Allow the meat to rest for 5 minutes before slicing.
