Make dazzling funfetti whoopie pies with pink buttercream for your next party.
Ingredients:
  • 250.00g butter, chopped, at room temperature
  • 100g (1/2 cup) caster sugar
  • 80g (1/2 cup, lightly packed) brown sugar
  • 4.40 gm vanilla extract
  • 1 egg
  • 2.50 gm bicarbonate of soda
  • 375g (2 1/2 cups) plain flour
  • 330ml (11 ⁄3 cups) buttermilk
  • 90g (1 ⁄3 cup) hundreds and thousands
  • 230g (1 1/2 cups) icing sugar mixture
  • 30.90 gm milk
  • Pink food colouring, to tint
Instructions:
  • Preheat your oven to 190C/170C fan forced. Line 2 baking trays with baking paper. In a bowl, beat together butter, sugars, and vanilla until pale and creamy. Then, mix in the egg.
  • Incorporate the bicarb soda. Gently mix in the flour and buttermilk in alternating additions using a metal spoon until just combined (the batter should be slightly thick).
  • Scoop mixture onto trays using a 3cm-diameter ice-cream scoop, leaving 5cm of space between each. Smooth edges with your finger and sprinkle with hundreds and thousands.
  • Bake for 10 minutes or until firm, swapping trays halfway through. Cool slightly, then transfer to a wire rack to cool completely. Repeat with the rest of the mixture.
  • Prepare the filling by creaming together butter and icing sugar until smooth. Pour in milk and mix well. Split the buttercream into 2 portions. Color one portion with a few drops of pink food coloring for a light pink shade. Mix well. Color the second portion with a more substantial amount of pink food coloring for a dark pink hue. Mix until evenly combined. Fill a piping bag fitted with a 1cm fluted nozzle by spreading the light pink icing on one side and the dark pink icing on the other side.
  • Fill half of the whoopie pies with a luscious swirl of buttercream, then gently press the remaining whoopie pies on top to create delicious sandwiches.
