Irresistibly delicious and simple pasta dish.
Ingredients:
  • 1 red onion, finely chopped
  • 100g pancetta, trimmed, rind removed, diced
  • 400g can diced tomatoes
  • 350g dried fusilli pasta
  • 500.00 ml shredded fresh rocket
  • 62.50 ml shredded fresh basil
Instructions:
  • In a large non-stick frying pan over medium heat, heat oil. Add onion and cook for about 5 minutes until tender. Add pancetta and cook for an additional 5 minutes until crisp. Add garlic and cook for 1 minute until golden.
  • Combine tomatoes and 1/4 cup of cold water in a pot. Bring to a boil over high heat, then reduce to low. Simmer uncovered, stirring occasionally, for 10 minutes until the sauce slightly thickens.
  • Cook the pasta in a saucepan of boiling, salty water according to the package instructions until it is tender. Drain the pasta.
  • Combine the pasta, arugula, and basil with the tomato mixture. Season generously with salt and pepper. Portion the pasta into individual bowls and enjoy your meal.
