Fusilli with Smoked Salmon

Colorful smoky dish sure to impress!
Ingredients:
  • 2 cups uncooked fusilli pasta (6 ounces)
  • 2 teaspoons butter or margarine
  • 2 medium carrots, shredded (about 1 1/4 cups)
  • 1 medium zucchini, cut into julienne strips
  • 1 medium yellow bell pepper, cut into thin strips
  • 1 cup refrigerated Alfredo sauce
  • 1/2 cup shredded Gruyère or Swiss cheese (2 ounces)
  • 1 tablespoon chopped fresh or 1/2 teaspoon dried dill weed
  • 1 cup flaked smoked salmon
Instructions:
  • Prepare pasta according to package instructions. In a 10-inch skillet over medium-high heat, melt butter. Sauté carrots, zucchini, and bell pepper until crisp-tender, stirring occasionally. Keep warm.
  • In a 2-quart saucepan, warm up the Alfredo sauce until hot. Add cheese and dill weed, and cook over medium heat for about 1 minute until the cheese is melted. Gently fold in the salmon.
  • Combine the Alfredo sauce with the vegetables and pasta in a large serving bowl, then serve right away.
