Mediterranean-style hummus made with garbanzo beans, balsamic vinegar, olive oil, garlic, and fresh rosemary in a quick and easy food processor recipe.
Ingredients:
  • 2 sprigs fresh rosemary
  • 1 clove garlic, peeled
  • 2 (15.5 ounce) cans garbanzo beans, drained
  • 0.25 cup olive oil
  • 0.25 cup balsamic vinegar
  • 0.25 cup cold water
  • salt and pepper to taste
Instructions:
  • Remove rosemary leaves from stems, discard stems, and place leaves in a food processor. Add garlic and pulse until finely chopped. Add garbanzo beans and blend until smooth.
  • While the food processor is running, gradually add the olive oil and scrape down the sides of the bowl, then pour in the balsamic vinegar and blend until smooth. Adjust the taste by adding more vinegar, 1 tablespoon at a time, if needed. Incorporate water until the mixture is spreadable, adding more water, 1 tablespoon at a time, if needed. Season with salt and pepper to your liking. Refrigerate until ready to serve.
