Elevate your chicken burger with a tangy chimichurri sauce - pure burger bliss awaits!
Ingredients:
  • 1/2 cup Italian parsley leaves
  • 1/4 cup fresh cilantro leaves
  • 2 tablespoons fresh oregano leaves
  • 2 cloves garlic, sliced
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon red pepper flakes
Instructions:
  • Finely chop herbs and garlic with a sharp knife. Transfer to a bowl and mix in olive oil, white wine vinegar, salt, black pepper, cumin, and red pepper flakes. Refrigerate until ready to use.
  • Chill chicken thighs in the freezer until firm and half-frozen, for about 30 minutes before making the burgers.
  • Chop chicken thighs on a cutting board with a sharp knife until coarsely ground, or pulse in a food processor until desired texture is achieved.
  • Place the chicken in a bowl and generously season with 1 1/2 teaspoons of salt. Pour in 1/4 cup of flavorful chimichurri sauce and mix everything together using a fork until well combined.
  • Shape the chicken mixture into 4 uniform patties, each 1/2-inch thick, using moistened hands. Chill covered in the refrigerator for approximately 30 minutes.
  • Combine mayonnaise and the remaining chimichurri sauce to create a flavorful spread for the buns. Chill in the refrigerator until ready to use.
  • Take the burgers out of the fridge and coat both sides with breadcrumbs for a crunchy crust.
  • Heat olive oil in a large non-stick skillet over medium-high heat. Add burgers and cook for about 5 minutes on each side, or until chicken is fully cooked. Use an instant-read thermometer to ensure the internal temperature reaches 145 to 150 degrees F (63 to 65 degrees C).
  • Allow the burgers to rest briefly. Serve them on buns topped with flavorful chimichurri mayo and your favorite toppings.
