Unique Fuyu persimmon pie with warm fall spices.
Ingredients:
  • 0.5 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 0.5 cup packed brown sugar
  • 0.25 cup lemon juice
  • 1 (14.1 ounce) package 9-inch pie crusts
  • 3 pounds Fuyu persimmons - peeled, cored, and sliced
  • 1 tablespoon cinnamon sugar, or to taste
Instructions:
  • Preheat the oven to a piping hot 425 degrees F (220 degrees C).
  • In a saucepan, melt butter and stir in flour to create a paste. Add white sugar, brown sugar, lemon juice, and cinnamon; let it come to a boil. Reduce heat and simmer until the sugar is fully dissolved.
  • Prepare a 9-inch pie plate by placing 1 crust in it. Fill the crust with sliced persimmons, gently mounding them towards the center. Drizzle the sugar-butter mixture over the persimmons.
  • Sprinkle cinnamon sugar on the second pie crust, then cut into strips. Create a lattice pattern by weaving the strips over and under, starting with an X in the center and using the shortest strips for the edges.
  • 1. Bake in a preheated oven for 15 minutes, then lower the temperature to 350°F (175°C). Bake until the crust is golden brown, approximately 45 minutes. Let the pie cool completely on a wire rack for about 2 hours.
