Indulge in decadent chocolate cupcakes from another galaxy.
Ingredients:
  • 100g dark chocolate, chopped
  • 125g butter, chopped, at room temperature
  • 215g (1 cup) caster sugar
  • 4.40 gm vanilla extract
  • 150g (1 cup) self-raising flour
  • 50g (1 ⁄ 3 cup) plain flour
  • 20.00 gm Dutch cocoa powder
  • 2 x 330g pkts store-bought royal icing
  • Purple, blue, pink and black food colouring, to tint
  • Edible glitter or silver shimmer dust, to decorate
  • Silver cachous (optional), to decorate
Instructions:
  • Preheat the oven to 160C/140C fan forced and line twelve 80ml (1 ⁄3 cup) muffin pans with paper cases.
  • In a saucepan, combine chocolate, butter, sugar, vanilla, and 160ml (2/3 cup) water. Stir over gentle heat for 5 minutes until smooth. Let it cool at room temperature.
  • Sift flours and cocoa into a large bowl. Blend eggs into the cooled chocolate mixture. Gently fold in the flour mixture with the chocolate mixture. Portion the batter into prepared cases. Bake for 20-25 minutes or until a skewer inserted in the center of a cupcake comes out clean. Cool on a wire rack.
  • Prepare the royal icing as instructed on the packet. Transfer half of the icing to a medium bowl and mix in black food coloring until well combined. Divide the rest of the icing into 4 small bowls and color each one with purple, blue, and pink food coloring, reserving one bowl as white.
  • Blend all 4 colors into the black icing gently using a skewer. Dip the tops of each cupcake into the icing, letting the excess drip off. Place the cupcakes back on the wire rack. Sprinkle with glitter or dust, and a few cachous if desired. Let the cupcakes sit for 20 minutes to allow the icing to set.
