Indulgent triple-layer chocolate slice topped with colorful M&M's and sprinkles.
Ingredients:
  • 250g packet choc ripple biscuits
  • 250g butter, melted
  • 180.00 gm brown sugar
  • 165.00 ml plain flour
  • 49.50 gm self-raising flour
  • 65.00 gm cocoa powder, sifted
  • 42.50 gm desiccated coconut
  • 64.38 gm milk
  • 1 egg, lightly beaten
  • 8.80 gm vanilla extract
  • Darrell Lea Orange bb’s balls, to decorate
  • Darrell Lea mint bb’s balls, to decorate
  • M&M’s, to decorate
  • M&M’s minis, to decorate
  • Assorted sprinkles, to decorate
  • Red writing icing
  • Yellow writing icing
  • 375.00 gm icing sugar mixture
  • 10g butter, softened
  • 50.00 gm boiling water
  • Blue gel food colouring
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan and line the base and sides with baking paper, making sure to extend the paper 2cm above the edges of the pan.
  • Add biscuits to a food processor and pulse until they become fine crumbs. Pour in half of the melted butter and pulse again until well combined. Firmly press the mixture onto the base of the pan and leave it aside.
  • In a bowl, blend sugar, flours, cocoa, and coconut. Stir in milk, egg, vanilla, and remaining melted butter. Mix thoroughly. Spread the mixture over the prepared base and bake for 35 minutes, or until the top sets. Allow it to cool fully before serving.
  • For the icing, mix cocoa and 2 cups of icing sugar in a bowl. Blend in butter and 2 tablespoons of boiling water until smooth. Adjust consistency with more boiling water if necessary. Spread this over the slice. In a separate bowl, combine the rest of the icing sugar with boiling water for a drizzling texture. Tint it dark blue with food coloring and drizzle over the slice.
  • Sprinkle assorted lollies and sprinkles, including bb's balls, on top of the slice. Use the picture as a reference to pipe writing icing onto the bb's balls to create a planetary design. Let set for 2 hours. Cut into squares and serve.
