Spiced chicken with fresh tomato and green onion.
Ingredients:
  • 4 (3 ounce) skinless, boneless chicken breast halves
  • 1 bunch green onions, chopped
  • 1.5 cups chopped tomatoes
  • 1 teaspoon garlic salt
  • 0.25 cup water
  • 2 teaspoons garam masala, divided
Instructions:
  • In a large skillet over medium-high heat, heat olive oil. Brown chicken breasts for 3 minutes on one side. Flip chicken, add onions, and cook for another 2 minutes. Add tomatoes, garlic salt, water, and stir. Season with 1 1/2 teaspoon garam masala. Bring to a boil, then cover and simmer on medium-low heat for 10 minutes, stirring occasionally.
  • Mix in the remaining 1/2 teaspoon of garam masala and increase the heat to medium-high to bring the mixture to a boil. Let it cook until the chicken is no longer pink in the center and the juices run clear, approximately 5 minutes. Use an instant-read thermometer to ensure the chicken reaches an internal temperature of 165 degrees F (74 degrees C).
