Try this rich, indulgent high-protein chocolate cake - a delicious flourless option!
Ingredients:
  • 1.5 cups semisweet chocolate chips
  • 1 (19 ounce) can garbanzo beans, rinsed and drained
  • 4 eggs
  • 0.75 cup white sugar
  • 0.5 teaspoon baking powder
  • 1 tablespoon confectioners' sugar for dusting
Instructions:
  • Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  • In a microwave-safe bowl, heat the chocolate chips for about 2 minutes, stirring every 20 seconds after the first minute, until the chocolate is melted and smooth. If using a powerful microwave, reduce the power to 50 percent.
  • In a food processor, blend beans and eggs until smooth. Add sugar and baking powder, pulse to combine. Blend in melted chocolate until smooth, scrape corners to ensure even mixing. Pour batter into cake pan.
  • Place the cake in the preheated oven and bake for 40 minutes, or until a knife inserted in the center comes out clean. Let it cool in the pan on a wire rack for 10 to 15 minutes, then invert onto a serving plate and sprinkle with confectioners' sugar before serving.
