Chilled quinoa salad with nutty flavor - perfect for picnics!
Ingredients:
  • 1 cup quinoa
  • 2 cups water
  • 1 (15 ounce) can garbanzo beans, drained
  • 0.5 cup dried cranberries
  • 0.5 cup golden raisins
  • 0.33333334326744 cup sliced almonds
  • 0.25 cup mint leaves, chopped
  • 0.75 teaspoon ground coriander
  • 0.25 teaspoon ground cumin
  • 1 tablespoon extra-virgin olive oil
  • salt and pepper to taste
Instructions:
  • In a saucepan over high heat, bring quinoa and water to a boil. Lower the heat to medium-low, cover, and simmer for 15 to 20 minutes until the quinoa is tender and water is absorbed. Transfer the cooked quinoa to a large bowl and chill in the refrigerator until cold.
  • Combine garbanzo beans, cranberries, raisins, almonds, mint, coriander, cumin, and olive oil with the quinoa. Season with salt and pepper to taste.
