Cozy up with a delicious Italian turkey sausage and garbanzo bean soup on chilly evenings.
Ingredients:
  • 1 pound Italian turkey sausage, casings removed
  • 2 carrots, thinly sliced
  • 1 large onion, chopped
  • 1 cup thinly sliced mushrooms
  • 0.33333334326744 cup chopped fresh parsley, divided
  • 1 clove garlic, minced
  • 3 cups water
  • 1 (15 ounce) can garbanzo beans (chickpeas)
  • 2 cubes beef bouillon
  • 0.5 teaspoon dried sage
  • salt and ground black pepper to taste
Instructions:
  • In a heated pot over medium heat, brown and crumble the turkey sausage by cooking and stirring for 5 to 7 minutes.
  • Combine carrots, onion, mushrooms, 1/4 cup parsley, and garlic with the sausage. Sauté until the onion is tender, about 7 to 10 minutes.
  • Add water, garbanzo beans with their liquid, beef bouillon cubes, and sage to the sausage mixture. Bring to a boil, then cover and simmer on low heat until the carrots are tender, approximately 10 minutes. Remove any excess fat from the surface. Season with salt and pepper, and sprinkle with the remaining 4 teaspoons of parsley before serving.
