Nutritious gluten-free breakfast bars with honey, currants, peanut butter, and garbanzo bean flour.
Ingredients:
  • 0.5 cup water
  • 0.25 cup uncooked brown rice
  • 0.33333334326744 cup peanut butter
  • 0.33333334326744 cup unsweetened applesauce
  • 1 cup garbanzo bean flour
  • 0.5 cup rolled oats
  • 0.5 cup dried currants
  • 0.25 cup sweetened flaked coconut, chopped
  • 2 tablespoons sunflower seeds
  • 2 tablespoons chia seeds
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and give an 8-inch pie pan a nice coat of cooking spray.
  • In a saucepan, let the water and brown rice come to a boil. Lower the heat to medium-low, cover, and simmer for 45 to 50 minutes until the rice is tender and has absorbed all the liquid.
  • In a bowl, combine peanut butter, applesauce, honey, and egg. Add rice, garbanzo bean flour, oats, currants, coconut, sunflower seeds, chia seeds, baking powder, and ground cinnamon. Stir until thoroughly mixed. Spread dough evenly in pie pan.
  • Bake until the edges turn a beautiful golden brown, approximately 20 minutes in the preheated oven.
