Savory breakfast fried rice with eggs, crispy bacon, and sautéed onions is a delicious weekend treat.
Ingredients:
  • 4 cups water
  • 2 cups uncooked white rice
  • 6 slices bacon
  • 4 eggs, beaten
  • 1 large yellow onion, chopped
  • 1 cup frozen peas
  • 4 green onions, chopped
  • 1.5 tablespoons soy sauce, divided
Instructions:
  • In a saucepan, bring water and rice to a boil. Cover, reduce heat to medium-low, and simmer for 20 to 25 minutes until rice is tender and liquid is absorbed.
  • Cook the bacon in a large skillet over medium-high heat, turning occasionally, until crisp and browned all over, which should take about 10 minutes. Remove the bacon slices to a paper towel-lined plate to drain, then crumble into bite-size pieces. Keep the delicious rendered bacon fat in the skillet for added flavor.
  • Continuously stir eggs in the skillet on medium heat until partially cooked, about 1 to 3 minutes. Add yellow onion, peas, green onion, and 1 1/2 teaspoons of soy sauce to the eggs; continue cooking and stirring until the yellow onion becomes transparent, approximately 5 minutes. Lower the heat to low; mix rice, crumbled bacon, and the rest of the soy sauce into the egg mixture until thoroughly combined and heated through, for about 1 to 3 minutes.
