Transform leftover brown rice into a creamy breakfast pudding by simmering it with milk, honey, and dried blueberries. Customize it with your favorite dried fruit.
Ingredients:
  • 1 cup cooked brown rice
  • 1 cup 2% low-fat milk
  • 2 tablespoons dried blueberries
  • 1 dash cinnamon
  • 1 tablespoon honey
  • 1 egg
  • 0.25 teaspoon vanilla extract
  • 1 tablespoon butter
Instructions:
  • In a small saucepan, mix the cooked brown rice with milk, blueberries, cinnamon, and honey. Bring to a boil, then simmer on low heat for 20 minutes.
  • In a small bowl, whisk the egg until smooth. Gradually whisk in 6 tablespoons of hot rice to temper the egg. Stir in the vanilla and butter, then continue cooking over low heat for 1 to 2 minutes until thickened.
