Try using whole millet in place of oatmeal for a chewy texture and mild, nutty flavor reminiscent of brown rice.
Ingredients:
  • 3 cups water
  • 1 cup uncooked millet
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup frozen blueberries
  • 1/4 cup chopped walnuts
  • Brown sugar, if desired
Instructions:
  • In a 2-quart saucepan, bring water, millet, salt, cinnamon, and nutmeg to a boil. Lower the heat, cover, and let it simmer for 20 to 25 minutes, stirring occasionally, until the millet is tender and most of the water is absorbed. Take it off the heat.
  • Gently fold in frozen blueberries until they are heated through and any excess liquid evaporates, then cover and allow to sit for about 3 minutes.
  • Spoon millet into 4 bowls, sprinkle with walnuts, and serve alongside brown sugar.
