Irresistible gluten-free blueberry pancakes made effortlessly with Coles Simply Gluten Free Pancake Mix.
Ingredients:
  • 500.00 ml frozen blueberries
  • Zest and juice of 1 lemon
  • 75.00 gm icing sugar, plus extra to dust
  • 375g simply gluten free pancake mix
  • 3 eggs, lightly beaten
  • 250.00 gm water
  • 20g butter
  • 120.00 gm ricotta, to serve
Instructions:
  • In a small saucepan, mix together berries, lemon zest, and icing sugar. Cook over medium heat for 5-6 minutes until a syrupy consistency forms. Remove from heat and let cool.
  • Combine Coles Simply Gluten Free Pancake Mix, eggs, and water in a medium bowl. Whisk until fully combined and let it stand for 3-4 minutes.
  • Wrap butter in paper towel. Heat nonstick pan over medium heat, grease with butter. Cook batter in 1/3 cup portions, flipping when bubbles appear, until golden and cooked through, about 1-2 mins each side. Serve with ricotta and blueberry compote, dust with icing sugar, and garnish with mint sprig if desired.
