Fluffy buttermilk blueberry pancakes bursting with blueberries - a perfect, easy breakfast treat!
Ingredients:
  • Dry ingredients:
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons sugar
  • Other ingredients:
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 cup milk
  • 3 tablespoons warm melted butter
  • 1 cup blueberries
  • Butter or vegetable oil
Instructions:
  • Prepare pancake batter: Combine the dry ingredients in a large bowl. In another bowl, whisk together eggs, milk, and buttermilk. Pour wet ingredients into the dry mixture and gently combine using a wooden spoon until just mixed. Add melted butter and stir until batter is slightly lumpy. Optionally fold in blueberries now or add them to the batter on the griddle to prevent bleeding.
  • Heat a large pan over medium to medium-high heat and grease with butter or oil. Pour batter onto the pan using a quarter-cup measure to create pancakes of 4 to 6 inches wide. Add blueberries to the pancakes while cooking, if desired.
  • When air bubbles form in the center, flip the pancakes. Cook until golden brown on both sides, using a bit of oil or butter between batches to prevent sticking. Serve warm with butter, maple syrup, and extra blueberries.
