Blueberry-Bran Pancakes

Irresistible buttermilk pancakes with bran and berries.
Ingredients:
  • 1 cup Fiber One™ original bran cereal
  • 1 egg
  • 1 1/4 cups buttermilk or milk
  • 2 tablespoons vegetable oil
  • 1 cup Gold Medal™ all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup Cascadian Farm® organic frozen blueberries, thawed
  • Additional blueberries and/or strawberries, if desired
Instructions:
  • Crush cereal by placing in a sealed bag and crushing with a rolling pin or food processor. In a medium bowl, beat egg, then mix in buttermilk, oil, and cereal; allow to sit for 5 minutes until cereal softens. Add remaining ingredients, excluding blueberries, then gently fold in 1/2 cup of blueberries.
  • Preheat griddle or skillet to 375°F and lightly grease with vegetable oil or cooking spray.
  • Pour 1/4 cup of batter onto a hot griddle for each pancake. Adjust batter thickness by adding more milk, 1 tablespoon at a time. Cook pancakes until puffed with bubbles, then flip and cook until golden brown. Top with blueberries and/or strawberries before serving.
