Delicious sweet bites perfect for snacking, making jam, or adding to pancakes for a special breakfast treat.
Ingredients:
  • 150g (1 cup) self-raising flour
  • 1 egg, lightly whisked
  • 500ml (2 cups) buttermilk
  • Melted butter, to grease
  • 125g punnet fresh blueberries
  • Pure maple syrup, to serve
  • Butter (optional), to serve
Instructions:
  • In a large bowl, gently sift the flour and create a well in the center. Add the egg and buttermilk, then use a fork to blend until just combined.
  • Preheat a large non-stick frying pan over medium heat and brush it with melted butter. Pour 2 tablespoons of batter three times into the pan, then top each portion with some blueberries. Cook for 2 minutes until bubbles form, then flip and cook for another 2 minutes until golden. Transfer to a plate and cover with foil to keep warm. Repeat this process 3 more times with the remaining batter and blueberries to yield a total of 12 delicious pancakes.
  • If desired, top with any leftover blueberries, maple syrup, and butter before serving.
