Try these scrumptious blueberry pancakes for a tasty, nourishing breakfast. Use thawed frozen blueberries if fresh ones aren't available.
Ingredients:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.125 teaspoon ground nutmeg
  • 0.125 teaspoon ground cinnamon
  • 1 tablespoon white sugar
  • 0.5 cup plain yogurt
  • 0.5 cup milk
  • 2 tablespoons vegetable oil
  • 0.75 cup fresh blueberries
Instructions:
  • Preheat griddle over gentle heat. Mix flour, baking powder, nutmeg, cinnamon, and sugar together; set aside.
  • Combine the egg, yogurt, milk, and oil in a medium bowl. Slowly incorporate the flour mixture, then gently mix in the blueberries.
  • Carefully drop two tablespoons of the batter onto the sizzling greased griddle. Cook over medium heat until bubbles form and set, then flip and cook until golden brown on the other side.
