Peaches and Cream Breakfast Rice

Cozy winter breakfast rice with sweet peaches, sugar-crust pecans, and a dollop of heavy cream.
Ingredients:
  • 2 cups water
  • 1.5 cups frozen sliced peaches
  • 0.5 cup white rice, rinsed and drained
  • 2 tablespoons peach preserves
  • 1 teaspoon vanilla bean paste
  • 0.25 cup chopped pecans
  • 1 teaspoon white sugar
  • 1 pinch ground cinnamon
  • 0.25 cup heavy cream, divided
Instructions:
  • In a multi-functional pressure cooker, such as an Instant Pot®, blend water, peaches, rice, peach preserves, vanilla bean paste, and salt. Secure the lid, set to high pressure for 5 minutes following the manufacturer's guidelines, and allow pressure to build for 10 to 15 minutes.
  • Follow the manufacturer's instructions to naturally release pressure for 15 minutes, then finish with a quick-release.
  • Heat coconut oil in a skillet until melted over medium heat. Add pecans, sugar, and cinnamon, stirring constantly until pecans are toasted, about 2-3 minutes.
  • Mix the pecan mixture gently into the rice until well combined. Portion the rice mixture into 4 serving bowls and generously drizzle each bowl with a dollop of cream. Serve immediately to enjoy the delicious flavors!
