Whip up this refreshing salad in just 15 minutes for a quick and satisfying meal.
Ingredients:
  • 1/2 cup plain yogurt
  • 2 tablespoons olive or vegetable oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon curry powder
  • 2 cups cooked couscous
  • 1 cup sliced zucchini
  • 1 cup garbanzo beans (from 15-oz can), rinsed and drained
  • 1/4 cup chopped red bell pepper
  • 2 medium green onions, sliced (2 tablespoons)
  • Lettuce leaves
Instructions:
  • Combine all dressing ingredients in a small bowl.
  • Combine all salad ingredients in a large bowl, excluding the lettuce. Gently fold in the dressing, cover the bowl, and refrigerate for at least 1 hour to allow the flavors to meld, but do not exceed 6 hours.
  • Place the salad over a bed of fresh lettuce leaves for an elegant presentation.
