Enjoy a fresh green salad with balsamic vinaigrette.
Ingredients:
  • 200g mixed salad leaves (such as endive, witlof, butter and treviso)
  • 2 avocados, halved, stones removed, peeled, thinly sliced
  • 2 Lebanese cucumbers, thinly sliced
  • 1 green capsicum, deseeded, thinly sliced
  • 60ml (1/4 cup) extra virgin olive oil
  • 20.00 ml balsamic vinegar
  • 1 garlic clove, crushed
  • 2.50 gm caster sugar
Instructions:
  • In a spacious serving bowl, mix together the assorted salad greens, avocado, cucumber, and bell pepper.
  • Whisk together the oil, vinegar, garlic, and sugar in a jug using a fork until fully blended. Season with salt and pepper to taste.
  • Drizzle the balsamic vinaigrette onto the salad and enjoy.
