Garlic and Lemon Roasted Turkey Breast

Citrus-infused garlic rub elevates turkey slices to irresistible levels.
Ingredients:
  • 3 cloves garlic, finely chopped
  • 1 tablespoon grated lemon peel
  • 1/4 cup chopped fresh parsley
  • 5- to 6-lb bone-in whole turkey breast
  • 2 tablespoons butter or margarine, melted
Instructions:
  • Combine minced garlic, grated lemon zest, chopped parsley, salt, and pepper in a small bowl. Carefully separate the skin from the turkey breast using your fingers and spread the garlic-lemon mixture underneath. Chill in the refrigerator for at least 1 hour, up to 8 hours.
  • Preheat oven to 325°F. Place the turkey breast on a rack in a shallow roasting pan. Insert an ovenproof meat thermometer into the thickest part of the breast without touching the bone. Brush the turkey with butter.
  • Roast uncovered for 2 to 2 1/2 hours until internal temperature reaches 170°F.
