Garlic bread cob loaf dip

Garlic butter-coated corn on the cob stuffed with a decadent 3-cheese blend. Simply irresistible!
Ingredients:
  • 1 large cob loaf
  • 18.20 gm olive oil
  • 20g butter, chopped
  • 4 green shallots, trimmed, sliced
  • 2 garlic cloves, crushed
  • 250g cream cheese, chopped, at room temperature
  • 235g (1 cup) Light Sour Cream
  • 100g (1 cup) grated Mozzarella Cheese Block (500g)
  • 65g (3/4 cup) grated cheddar
  • 40g (1/2 cup) extra-sharp shredded parmesan
  • 125.00 ml finely chopped fresh continental parsley
  • Vegetable sticks, to serve
  • 100g butter, at room temperature, chopped
  • 4 garlic cloves, crushed
  • 20.00 ml chopped fresh sage leaves
Instructions:
  • Preheat the oven to 180C (160C fan forced) and line a baking tray with baking paper.
  • To make the garlic butter, mix butter, garlic, and sage in a bowl. Set aside 1 tablespoon of the mixture at room temperature. Place the rest on plastic wrap, shape into a log, and chill in the fridge for 30 minutes.
  • Prepare the cob loaf by removing the top and scooping out the soft bread from the center, leaving a 2-3cm shell. Tear or roughly chop the bread pieces, including any from the lid. Place the cob and torn bread on a tray. Drizzle the bread with olive oil to create croutons. Bake for 15 minutes until crispy. Move the croutons to a separate tray and set aside.
  • In a frying pan over medium heat, melt the butter. Cook the shallot, stirring, for 2 minutes until softened. Remove from heat and add crushed garlic, cream cheese, and sour cream. Combine well. Mix in mozzarella, cheddar, parmesan, and parsley.
  • Unwrap the garlic butter and cut it into 1cm pieces. Spread half of the cheese mixture inside the cob loaf. Add half of the chopped butter mixture on top, pressing gently into the cheese. Follow with the rest of the cheese mixture and chopped butter, pressing gently again. Cover with foil and bake for 15 minutes. Remove foil, brush the cob with the reserved garlic butter, and bake for an additional 10 minutes or until the bread is golden brown.
  • Garnish with the set-aside croutons and fresh vegetable sticks.
