Cheesy bacon cob loaf dip

Impress guests with our delicious cheesy bacon cob loaf dip - a golden baked sensation!
Ingredients:
  • 1 cob loaf
  • 4 bacon rashers, finely chopped
  • 5.00 gm smoked paprika
  • 1 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 250g cream cheese, softened
  • 300ml thickened cream
  • 5.90 gm Dijon mustard
  • 2 spring onions, thinly sliced
  • 180g tasty cheese
  • Chopped flat-leaf parsley, to serve
Instructions:
  • Preheat your oven to 180°C and prepare a baking tray lined with baking paper.
  • Heat a large frying pan over medium-high heat. Cook bacon and paprika, stirring frequently, for 5 minutes until bacon is crispy and browned. Transfer to a paper towel-lined plate.
  • Heat the oil in a pan over medium-high heat. Sauté the onion and garlic for 3 minutes until the onion softens. Add two-thirds of the bacon, then remove from heat.
  • Combine cream cheese, cream, and mustard in a large bowl, stirring until almost smooth with some lumps. Add onion mixture, half of the spring onion, and 1 1/4 cups (150g) cheddar, folding until well combined.
  • 1. With a serrated knife, slice off the top of the loaf by 4cm. Hollow out the center of the loaf, ensuring a 2cm-thick shell remains. Tear the removed bread into 3cm pieces. Fill the bread shell with the cream cheese mixture and sprinkle with the leftover cheddar. Transfer to a baking tray and surround with the torn bread pieces. Bake until golden, about 20 minutes.
  • Garnish with the saved bacon, leftover spring onion, and parsley before serving.
