Creamy spring onion and bacon dip loaf

Wow your guests with a luscious spring onion and bacon dip in a hollowed-out cob loaf.
Ingredients:
  • 4.60 gm olive oil
  • 175g short-cut bacon, finely chopped
  • 4 spring onions, thinly sliced
  • 2 garlic cloves, crushed
  • 250g cream cheese, softened
  • 120g sour cream
  • 62.50 ml flat-leaf parsley, chopped
  • 500g loaf pane di casa
  • Mixed vegetable sticks, to serve
  • Spring onion, extra, shredded, to serve
Instructions:
  • Preheat your oven to 180C and prepare a baking tray by lining it with baking paper.
  • In a medium frying pan over medium-high heat, heat oil. Add bacon and half of the spring onion. Stir and cook for 3 minutes until bacon begins to brown. Add garlic and cook for 30 seconds until fragrant. Drain on paper towel.
  • Combine three-fourths of the bacon mixture with cream cheese, sour cream, parsley, and the rest of the spring onion in a large bowl. Season generously and mix until thoroughly combined.
  • Start by slicing off the top 4cm of the loaf and set it aside. Hollow out the center of the loaf, leaving a 2cm-thick shell. Tear the removed bread into 3cm pieces. Fill the hollowed loaf with the bacon mixture. Place the loaf, torn bread, and lid on a baking tray. Give them a light spray of oil. Bake for 20 minutes or until the bread turns golden. Sprinkle the reserved bacon mixture and chopped spring onions on top. Enjoy your loaded bread bowl with fresh veggies for dipping!
