Shop for beef mince meatloaf and creamy mashed potatoes ingredients.
Ingredients:
  • 9.20 gm olive oil
  • 4 rashers short-cut bacon, finely chopped
  • 750g beef mince
  • 1 carrot, peeled, grated
  • 1 zucchini, grated, excess moisture squeezed out
  • 105g breadcrumbs
  • 80ml tomato sauce
  • Salt & freshly ground pepper
  • Mashed potato & steamed green beans, to serve
  • Extra tomato sauce, to serve
Instructions:
  • Preheat the oven to 180°C and line a 7cm deep, 10 x 20cm loaf pan. In a medium frying pan over medium heat, sauté the bacon and onion in oil for 7-8 minutes until soft.
  • Combine the bacon mixture, mince, carrot, zucchini, breadcrumbs, tomato sauce, and eggs in a large bowl. Season generously with salt and pepper, then mix thoroughly with your hands until fully incorporated. Press the mixture firmly into the pan.
  • Bake for 40-50 minutes until fully cooked. Rest for 10 minutes before serving.
  • Slice the savory meatloaf and present it alongside creamy mashed potatoes, tender green beans, and a generous drizzle of extra tomato sauce.
