Garlic bread pasta chips recipe

Elevated pasta chips with garlic bread twist, served with cheesy mornay dip for ultimate indulgence.
Ingredients:
  • 200g dried bowtie pasta
  • 25g (1/2 cup) panko breadcrumbs, lightly toasted
  • 20.00 ml finely chopped parsley
  • ½ tsp garlic powder
  • 40.00 ml finely shredded parmesan
  • Vegetable oil, to deep fry
  • 30g butter, chopped
  • 20.00 ml plain flour
  • 250ml (1 cup) milk
  • 65g (3/4 cup) pre-grated three cheese mix
Instructions:
  • Cook the pasta in a large saucepan of salted boiling water according to the package instructions until al dente. Drain and spread out on a paper towel-lined tray to dry.
  • In a large bowl, mix together the breadcrumbs, parsley, garlic, and parmesan.
  • Melt the butter in a small saucepan over medium heat. Stir in the flour and cook for 30 seconds until bubbly. Remove from heat and slowly whisk in the milk until smooth. Return to medium heat and cook for 2-3 minutes until thickened. Add the cheese and stir until melted. Keep warm in the saucepan, covering the surface with plastic wrap to prevent a skin from forming.
  • Fill a large saucepan with oil, making sure it reaches one-third up the side. Heat it over medium-high heat until it reaches 180°C on a cook’s thermometer. Deep-fry the pasta in batches, turning occasionally, until golden brown (3-5 minutes). Use a slotted spoon to transfer the fried pasta to a tray lined with paper towel for 5 seconds to drain, then immediately coat with the breadcrumb mixture while still warm. Serve on a plate and repeat with the rest of the pasta.
  • Unwrap the dip and gently heat it over low heat for 1-2 minutes. Then, transfer it to a serving bowl and enjoy with the pasta chips.
