Garlic bread pasta recipe

Whip up a quick and delicious garlic bread spaghetti using pantry staples in just 20 minutes!
Ingredients:
  • 400g dried Italian Spaghetti
  • 300g crusty bread, such as pane di casa, torn
  • 80ml (1/3 cup) extra virgin olive oil
  • 6 garlic cloves, crushed
  • 80g butter, chopped, plus 40g extra, at room temperature
  • 80g (1 cup) finely grated parmesan
  • 62.50 ml chopped fresh continental parsley
Instructions:
  • Boil the pasta in a generously salted large saucepan of boiling water according to package instructions until 'al dente'. Save 185ml (3/4 cup) of the cooking liquid. Drain the pasta and transfer it back to the pan.
  • Pulse bread in a food processor until finely crumbled.
  • In a medium frying pan over medium-high heat, warm up some oil until shimmering. Toss in breadcrumbs and cook, stirring constantly, for about 5 minutes until they turn a light golden color. Introduce garlic and butter to the pan, continue to cook and stir for an additional 3 minutes until the breadcrumbs reach a rich golden brown hue.
  • Combine most of the breadcrumb mixture with the parmesan and parsley, and mix into the pasta. Pour in the reserved cooking liquid and stir over low heat until everything is mixed and warmed through. Season to taste.
  • Portion the pasta evenly into individual serving bowls, then distribute the extra butter, remaining breadcrumb mixture, parmesan cheese, and parsley among the bowls to enhance the presentation and flavors.
