Elevate classic chicken schnitzel with gourmet garlic butter.
Ingredients:
  • 520g uncrumbed chicken breast schnitzel
  • 80g butter
  • 4 garlic cloves, crushed
  • 1 bunch broccolini, trimmed, halved
  • 150g (1 cup) frozen peas
  • 2 zucchini, sliced
  • 40.00 ml baby basil leaves
Instructions:
  • Season the chicken generously. Melt the butter in a non-stick heavy-based frying pan over medium-high heat. Sear the chicken for 2-3 minutes on each side until golden brown. Place on a plate and cover to retain heat.
  • In the same pan, melt the remaining butter. Sauté the garlic for 30 seconds. Add the vegetables and stir-fry for 2-3 minutes until tender. Add the chicken back to the pan and heat through.
  • Slice the succulent chicken and arrange it on serving dishes with the crisp vegetables. Sprinkle the aromatic basil leaves on top and accompany with a generous sprinkle of freshly ground black pepper.
