Garlic butter potted prawns

Impress with ease this Christmas with our make-ahead garlic butter potted prawns. Added tartare sauce gives a tangy twist. Chill for 1 hour, cook in 20 minutes. Enjoy a stress-free feast with our festive recipes.
Ingredients:
  • 125g unsalted butter
  • 1 large garlic clove, crushed
  • 10g punnet fresh Chives, finely chopped
  • 600g Cooked Tiger Prawns, peeled, deveined, coarsely chopped
  • 75g (1/4 cup) crème fraîche
  • 60g (¼ cup) Tartare Sauce
  • Grated lemon rind & juice of 1 lemon
  • ¼ tsp ground nutmeg
  • 4 Bake At Home Dinner Rolls, cut crossways into 1cm-wide slices
Instructions:
  • In a small saucepan, melt the butter over low heat for 2-3 minutes. Remove from heat and stir in the garlic. Skim off any impurities from the surface, let it cool for 15 minutes, then pour into a small jug.
  • Meanwhile, set aside 2 tsp of chives. Combine prawns, crème fraîche, tartare sauce, lemon rind and juice, nutmeg, and the reserved chives in a bowl. Stir well.
  • Distribute the prawn mixture evenly into four 150ml ramekins and level the top. Drizzle the butter mixture on top, ensuring to exclude any milk solids from the bottom of the container. Sprinkle with the saved chives. Chill in the fridge for 1 hour or until firm.
  • Preheat your oven to 220C/200C fan forced. Line a large baking tray with baking paper, place the bread slices on it, and give them a quick spray of oil. Bake for 8-10 minutes until golden brown. Allow to cool for 2 minutes before serving.
  • Enjoy the potted prawns with freshly toasted bread.
