Indulge in Dani Venn's irresistible spring dish: potted garlic prawns - simple to prepare, bursting with flavor.
Ingredients:
  • 400g salted butter
  • 1 tsp grated nutmeg
  • 10.60 gm lemon juice
  • 2 tsp minced garlic
  • 1 tsp white pepper
  • 500g cooked prawns, from the deli, tails removed, roughly chopped
  • 125.00 ml chopped parsley
  • 1/2 tsp ground chilli, for garnish
  • Fresh or toasted crusty bread, to serve
Instructions:
  • In a saucepan over low heat, gently melt the butter. Let it separate into clear butterfat and milk solids. Skim off any solids that rise to the surface. Strain the melted butterfat into a clean bowl, discarding the milk solids.
  • Set aside 1/4 cup of clarified butter. Melt the rest in a clean saucepan over low heat. Add nutmeg, lemon juice, garlic, and white pepper. Swirl gently to combine. Remove from heat and let flavors meld for 5 minutes.
  • In a bowl, mix prawn meat and parsley. Add flavored butter and mix thoroughly. Divide mixture evenly into four 1/2 cup serving dishes. Chill until firm, then pour a thin layer of clarified butter on each dish. Sprinkle with chili powder before serving. Enjoy with crusty bread.
