Savor garlic butter rice with bacon and veggies - perfect for BBQs and picnics!
Ingredients:
  • 1 cup uncooked white rice
  • 6 tablespoons salted butter, or more to taste
  • 1 medium onion, minced
  • 2 tablespoons minced garlic
  • 0.5 pound bacon, chopped
  • 1 (8 ounce) package frozen peas and corn
Instructions:
  • In a saucepan, bring water and rice to a boil. Lower the heat to medium-low, cover, and simmer for 20 to 25 minutes until the rice is tender and water is absorbed. Let it cool to room temperature for about 30 minutes, then refrigerate for 8 hours to overnight.
  • In a large frying pan or wok, melt butter over low heat. Sauté onion and garlic until onion is soft, for about 5 minutes. Add bacon and frozen vegetables, and cook until bacon is cooked through, for 7 to 10 minutes.
  • Stir in chilled rice until fully coated in butter. Season with salt and pepper, then cook until warmed through, for approximately 5 minutes.
