Savory soy chicken with sweet & salty sauce - on the table in 35 minutes for a quick and delicious weeknight meal.
Ingredients:
  • 30g butter
  • 3 garlic cloves, crushed
  • 250g (1 1/4 cups) basmati rice
  • 80ml (1/3 cup) rice wine vinegar
  • 60ml (1/4 cup) salt-reduced soy sauce
  • 55g (1/4 cup, firmly packed) brown sugar
  • 1 tsp sesame oil
  • 2 tsp finely grated fresh ginger
  • 6 chicken thigh fillets, halved crossways
  • 2 bunches Asian greens
  • 6.00 gm sesame seeds, toasted
  • 25g (1/3 cup) fried shallots
  • 2 green shallots, thinly sliced
Instructions:
  • In a saucepan over medium heat, melt butter. Stir in garlic and cook for about 1 minute until fragrant. Add rice and coat with the mixture. Pour in 625ml (21 ⁄2 cups) water and bring to a boil. Reduce heat, cover, and simmer for 12 minutes until rice is nearly cooked and liquid is absorbed. Remove from heat, cover, and let it sit for 10 minutes before serving.
  • In a small frying pan, mix vinegar, soy sauce, sugar, oil, and ginger with 25g (1 ⁄ 3 cup) toasted shallots and 2 thinly sliced green shallots. Boil the mixture, then reduce heat and simmer for 3 minutes until slightly thickened. Remove from heat.
  • 1. Heat a large non-stick frying pan over medium heat until hot. 2. Pan-fry the chicken, turning occasionally, for 8 minutes or until it is golden and fully cooked. 3. Pour in the vinegar mixture and continue cooking for 2-3 minutes, until the chicken is nicely glazed and the sauce slightly thickens.
  • Cook Asian greens until perfectly tender by boiling, steaming, or microwaving. Then, drain excess water.
  • Ladle the perfectly cooked rice, juicy chicken, and fresh greens into individual serving bowls. Drizzle with the flavorful sauce from the pan, then sprinkle with nutty sesame seeds, crispy fried shallots, and vibrant green shallots.
