Savor a comforting garlic chicken with veggies - perfect for family meals.
Ingredients:
  • 3 garlic cloves, crushed
  • Salt & ground black pepper, to taste
  • 4 (about 175g each) half chicken breasts on the bone
  • 250ml (1 cup) chicken style liquid stock
  • 500g pink fir apple potatoes, unpeeled, scrubbed
  • 250g green beans, topped
Instructions:
  • In a large bowl, mix together the oil, garlic, salt, and pepper. Add the chicken breasts and evenly coat them with the mixture.
  • Heat a large frying pan over medium-high heat. Place the chicken skin-side down and add any remaining oil mixture. Sear each side for 2-3 minutes until golden. Pour in the stock, reduce heat to medium-low, cover, and cook for 12-15 minutes until the chicken is fully cooked.
  • Place potatoes in a large saucepan, cover with cold water, add a pinch of salt, and bring to a boil over high heat. Reduce heat, simmer for 8-10 minutes until tender, then drain, cut in half lengthways, and keep warm in the pan.
  • Boil beans in a small saucepan of water until tender-crisp, about 3-4 minutes. Drain well.
  • Assemble the chicken, potatoes, and beans in individual bowls. Pour the flavorful pan juices over the top before serving.
