Garlic chicken with zucchini pasta

Quick and delicious chicken and zucchini spaghetti - perfect for busy weeknights!
Ingredients:
  • 400g dried thin spaghetti
  • 36.40 gm olive oil, plus extra to serve
  • 2 chicken breast fillets
  • 2 zucchini, peeled into ribbons
  • 1 baby fennel, shaved
  • 1 garlic clove, crushed
  • Grated orange rind
  • Chopped fresh dill
Instructions:
  • Boil the pasta in salted water until perfectly cooked.
  • Heat 1 tablespoon of oil in a non-stick frying pan over medium heat. Sear the chicken on each side for 5 minutes or until fully cooked. Slice before serving.
  • Heat up the rest of the oil in the pan. Sauté zucchini, fennel, and garlic until tender, about 1 to 2 minutes. Combine with chicken, spaghetti, orange zest, and dill. Drizzle with a touch of extra oil before serving.
