Quick and easy chicken fajitas with zesty garlic, onion, and lime - a weeknight crowd-pleaser!
Ingredients:
  • 0.25 cup orange juice
  • 0.25 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon dried minced garlic
  • 1 teaspoon dried minced onion
  • 0.75 teaspoon dried oregano
  • 0.5 teaspoon dried cilantro leaves
  • 0.5 teaspoon salt
  • 0.5 teaspoon coarsely ground black pepper
  • 1.5 pounds boneless chicken breasts, cut into thin strips
  • 1 green bell pepper, cut into thin strips
  • 1 onion, thinly sliced
  • 8 (8 inch) flour tortillas
Instructions:
  • Combine orange juice, lime juice, olive oil, garlic, dried onion, oregano, cilantro, salt, and black pepper in a bowl and whisk until smooth. Reserve 1/4 cup of the marinade. Transfer the rest into a resealable bag, add chicken, remove air, and seal the bag. Chill in the fridge for a minimum of 30 minutes.
  • Remove the chicken from the marinade, allowing any excess to drip off, and discard the rest of the marinade.
  • Sear the chicken in a large skillet over medium-high heat until golden and cooked, for about 3 to 7 minutes. Set aside on a plate. In the same skillet, sauté pepper and onion with 1/4 cup reserved marinade until veggies are tender and sauce thickens, about 5 minutes. Add the chicken back to the skillet and cook until heated through, for about 2 to 3 minutes.
  • Fill tortillas with flavorful chicken mixture.
