Homemade easy and delicious meal ready in no time for a stress-free weeknight dinner.
Ingredients:
  • 6 (about 600g) chicken thigh fillets, cut into 3cm pieces
  • 2 garlic cloves, crushed
  • 10.00 gm sweet paprika
  • 21.00 gm lemon juice
  • 36.40 gm extra virgin olive oil
  • 1 orange
  • 1 red onion, finely chopped
  • 2 large carrots, peeled, finely chopped
  • 5.00 gm ground cumin
  • 5.00 gm sweet paprika
  • 250ml chicken stock
  • 57.20 gm honey
  • 190g couscous
  • 75g pistachio
  • 125.00 ml coarsely chopped coriander
Instructions:
  • In a medium bowl, mix the chicken with garlic, paprika, lemon juice, and oil. Season with salt and pepper, then thread onto skewers. Cover with plastic wrap and refrigerate for 15 minutes to enhance the flavors.
  • Prepare the carrot and pistachio couscous by zesting the orange to remove the rind, then juice the orange. Alternatively, peel the orange using a vegetable peeler, remove the white pith from the rind with a small sharp knife, and cut the rind into very thin strips.
  • In a large frying pan over medium heat, heat the oil. Cook onion and carrot for 5 minutes until onion softens. Stir in cumin and paprika for 1 minute until aromatic. Pour in chicken stock, honey, and 2 tablespoons orange juice; bring to a simmer. Stir in couscous and remove from heat. Cover and let sit for 5 minutes. Fluff grains with a fork, then fold in pistachios, half of the coriander, and orange zest. Enjoy!
  • Preheat a frying pan over high heat. Cook the skewers, turning occasionally, for 6-7 minutes until fully cooked.
  • Divide the couscous onto serving plates, place the skewers on top, and then sprinkle with the leftover coriander and orange zest. Serve promptly with lemon wedges, if preferred.
