Garlic Rösti Potatoes

Elevate your potato game with flavorful, crispy herb pancakes.
Ingredients:
  • 1 1/4 pounds boiling potatoes, peeled (about 4 medium)
  • 2 tablespoons finely chopped onions
  • 2 tablespoons finely chopped fresh parsley
  • 2 garlic cloves, crushed
  • 4 tablespoons butter or margarine
  • 1/2 cup shredded Gruyère cheese (2 ounces)
Instructions:
  • Place potatoes in a 3-quart saucepan and cover with cold water. Bring to a boil, then lower the heat and simmer uncovered for 25 to 30 minutes until potatoes are just tender. Drain and allow to cool until manageable.
  • Grate potatoes and mix with onion, parsley, and garlic for a flavorful twist.
  • Melt 2 tablespoons of butter in a 10-inch skillet. Shape potato mixture into patties with your fingers and place them in the skillet. Cook uncovered over medium-high heat for about 7 minutes until the bottom is golden brown. Then, flip the patty onto a heatproof platter.
  • Melt the remaining 2 tablespoons of butter in a skillet and place the patty uncooked side down. Cook uncovered over medium-high heat for about 7 minutes until the bottom is golden brown.
  • Transfer the patty to a heatproof platter and sprinkle with cheese. Place it in the oven with the broil setting and cook for about 1 minute, until the cheese is melted and bubbly.
