Healthy Indian-spiced broccoli fritters with green yoghurt recipe

Nutritious broccoli fritters served with roti, green salad, and yogurt.
Ingredients:
  • 350g broccoli, roughly chopped
  • 250.00 ml frozen broad beans, thawed, peeled
  • 1 garlic clove, crushed
  • 3 green onions, chopped
  • 40.00 ml chopped fresh mint leaves, plus extra sprigs to serve
  • 250.00 ml chickpea flour (see note)
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 57.50 gm vegetable oil
  • 4 baby cucumbers, thinly sliced
  • Warmed roti, to serve
  • Mixed salad leaves, to serve
  • 125.00 ml plain Greek-style yoghurt
  • 250.00 ml fresh mint leaves
  • 5.30 gm lemon juice
Instructions:
  • In a food processor, blend broccoli, broad beans, garlic, onion, and mint until finely chopped. In a large bowl, mix flour, baking powder, cumin, and coriander, then season with salt and pepper. Create a well in the center and add an egg and 2/3 cup water. Whisk until smooth. Fold in the broccoli mixture until thoroughly combined.
  • In a frying pan over medium heat, heat oil. Spoon 1/4 cup of batter into the pan and shape into a 6cm round. Cook each fritter for 2 minutes on each side until golden brown and cooked through. Drain on paper towel. Repeat with remaining batter to make 12 fritters.
  • Prepare the Green Yoghurt by combining yoghurt, mint, and lemon juice in a small food processor. Blend until the mixture turns green and achieves a smooth consistency. Season with salt and pepper to taste.
  • Garnish fritters with a dollop of green yogurt, cucumber slices, roti, fresh salad leaves, and a sprinkle of extra mint on top.
