Nuts are a protein-packed treasure filled with healthy fats - a must-have ingredient!
Ingredients:
  • 60ml (1/4 cup) honey
  • 95g (1/3 cup) korma curry paste
  • 160g (1 cup) almond kernels
  • 150g (1 cup) salted peanuts
  • 145g (1 cup) unsalted cashew nuts
  • 145g (1 cup) unsalted macadamia nuts
  • 170g (1 cup) raisins
  • 55g (1 cup) flaked coconut
Instructions:
  • In a spacious bowl, mix honey, curry paste, and garlic. Add almonds, peanuts, cashews, and macadamias, stirring until evenly coated. Transfer the nut mixture into a large oven bag and tightly twist the opening to seal.
  • Arrange the nuts in a single layer inside the oven bag, making sure the twisted opening is positioned underneath to prevent it from opening during cooking.
  • Microwave the nuts on High for 8-12 minutes, shaking the bag every 2 minutes until toasted. Then, spread the nuts on a baking tray in a single layer and let them cool for 30 minutes.
  • Roughly crush the nuts and transfer them to a spacious bowl. Mix in the raisins and coconut until evenly incorporated.
