Delicious Indian nut and spice mix with crunchy noodles and warm pappadums in mini bowls.
Ingredients:
  • Peanut oil, to grease
  • 80g (1/2 cup) raw cashews
  • 85g (1/2 cup) blanched almonds
  • 45g (1/2 cup) Original Fried Noodles
  • 20g (1 cup) puffed rice
  • 80g (1/2 cup) frozen peas, thawed
  • 90g (1/2 cup) sultanas
  • 36.40 gm peanut oil, extra
  • 15.00 gm curry powder
  • 3 large plain pappadums
  • Olive oil spray
Instructions:
  • Preheat the oven to 200°C. Lightly grease 2 baking trays with oil. Combine cashews, almonds, noodles, and puffed rice in a medium bowl. Pat dry the peas with paper towel and place in a small bowl. Keep the sultanas in a separate small bowl.
  • Drizzle 1 1/2 tablespoons of extra oil and add 1 tablespoon of curry powder to the nut mixture. Toss to coat. Divide the rest of the oil and curry powder between the peas and sultanas. Toss to coat evenly.
  • 1. Spread the nut mixture on one tray and the peas on another. Bake in the oven for 6 minutes. 2. Add the sultanas to the nut mixture and bake for another 6 minutes or until golden. 3. Remove the nuts from the oven, then bake the peas for an additional 7 minutes or until lightly browned and slightly crisp. 4. Allow both trays to cool completely.
  • Mix the nut mixture with the peas in a large bowl.
  • Coat both sides of 1 pappadum with olive oil spray. Put it on a microwave-safe plate lined with non-stick baking paper. Microwave on high (800 watts / 100%) for 50 seconds or until puffed. Repeat with the rest of the pappadums. Break into pieces, add to the nut mixture, and stir to combine. Serve.
