Ingredients:
  • 10.00 gm ground cumin
  • 7.50 gm curry powder
  • 7.50 gm ground cinnamon
  • 2 tsp cayenne pepper
  • 3 egg whites, at room temperature
  • 4.80 gm salt
  • 75g (1/3 cup) caster sugar
  • 140g (1 cup) unsalted cashew nuts
  • 165g (1 cup) blanched almonds
  • 120g (1 cup) walnut pieces
  • 120g (1 cup) pecan nuts
  • 35g (1/2 cup) flaked coconut
Instructions:
  • Preheat your oven to 180°C and line a large baking tray with non-stick baking paper.
  • Mix together the cumin, curry powder, cinnamon, cayenne pepper, and black pepper in a small bowl.
  • Whisk egg whites and salt using electric beaters until frothy with large air bubbles in a clean, dry medium mixing bowl. Gradually add sugar while whisking constantly. Gently fold in the spice mixture using a large metal spoon.
  • In a large bowl, mix together cashew nuts, almonds, walnut pieces, pecan nuts, and coconut. Pour in the spiced egg white and stir until nuts are coated. Spread the mixture on a lined tray and bake in a preheated oven, stirring every 5 minutes, for 20 minutes or until nuts are dry. Let cool completely on the tray before transferring to an airtight container.
